What type of raw HTML could I embed as a header or footer script?

Header and Footer scripts can be utilized when you want to insert specialized JavaScript code snippets onto your website that need to be available on all pages. If you utilize google analytics to track visitors, other SEO tracking, or if you wish to add another widget that requires the use of a header script or custom HTML code, you can embed the code directly onto your site using the Scripts section of the left-hand toolbar.

Simply click on the key icon as shown below and embed your code directly into the editor.
